Heather's Salad and Toastie

I love gardening and I think vegetables are some of the most beautiful things I have ever laid eyes on. I sing to vegetables and tell them I love them all the time, and they give me my energy for the day. The colours, the shapes, they are magic. There is something so heartwarming and instinctual about digging your food out of the earth. 

I make this salad for potlucks all the time. People love it because it’s simple, and each time someone says, “This the best salad I’ve had.” The secret is fresh garden lettuce, organic local honey, garden garlic and garden carrots.

Red Leaf, Garlic Salad

1 head of red leaf lettuce

5 diced carrots

1/2 diced cucumber

1/2 bunch of chopped parsley

1/3 cup of grated Parmesan cheese

1 sliced avocado

Dressing

2 minced garlic cloves

1 juiced lemon

2 tbsp of honey

1/2 cup of extra virgin olive oil

Directions:

Mix dressing, and toss it together with the salad ingredients – simple.

Garden Veggie Toastie

slices of your favourite seedy bread

spinach

roasted red pepper

mushrooms

sliced olives

old cheddar cheese

Directions:

Layer the ingredients on the bread with the cheese on the outside and the veggies in the centre.

Place the bread “lid” on top.

Put in panini press or brown both sides in a regular frying pan, over medium heat.

Toast until cheese is melted.

Heather Lamoureux considers herself privileged to be a guest on the Coast Salish territory of the Musqueam, Squamish and Tsleil-Waututh nations. Here, she is a producer, artist, activist and facilitator. Her work stems from her relationship with Mother Earth. She moves with determination to walk with generosity in her feet and with honesty in her heart. 

Lamoureux is the artistic director/founder of Vines Art Festival, producer at Raven Spirit Dance and curatorial assistant at PuSh International Performing Arts Festival (PuSh). She works for other performing arts organizations including the Dancing on the Edge festival and the Firehall Arts Centre. She is trained in expressive movement therapy from Tamalpa Institute under the instruction of Anna and Daria Halprin and holds a BFA in dance with minor in business administration from Simon Fraser University. Lamoureux is a member of Pressed Paradise, a performance art collective.
